Fish in Caper Butter



  • 6 mahi mahi fillets (whitefish)
  • 6 Tbsp. butter
  • 1/4 cup baby capers
  • 1/4 cup flour
  • Juice from 3 lemons
  • Salt and pepper
  • Pinch of sugar



  1. Wash the fillets. Season with salt and pepper and pass through flour, shaking off extra flour. Melt the butter over medium heat, add a little corn oil and sear the fillets on both sides.
  2. Remove the fillets from the pan and pour in the lemon juice and capers with 3 more Tbsp. of butter.
  3. Adjust the seasoning and add a pinch of sugar. Sauté the capers for oneminute and sprinkle over the fillets.
