- 6 mahi mahi fillets (whitefish)
- 6 Tbsp. butter
- 1/4 cup baby capers
- 1/4 cup flour
- Juice from 3 lemons
- Salt and pepper
- Pinch of sugar
- Wash the fillets. Season with salt and pepper and pass through flour, shaking off extra flour. Melt the butter over medium heat, add a little corn oil and sear the fillets on both sides.
- Remove the fillets from the pan and pour in the lemon juice and capers with 3 more Tbsp. of butter.
- Adjust the seasoning and add a pinch of sugar. Sauté the capers for oneminute and sprinkle over the fillets.
