D&S Mojito Parfait

  • 1 small store-bought sponge cake, pareve Kosher for Passover
  • Raspberry puree
  • 12 oz. Pareve whipped topping (substitute for whipped cream)
  • 4 oz. confectioners sugar
  • Simple syrup made of 4 oz. water and 4 oz. white sugar
  • Lime zest
  • 10 fresh mint leaves chopped fine
  • 1 oz. fresh ginger chopped fine
  • Blackberry puree



  1. Gently fold into whipped topping 5 tsp. confectioners sugar, 1 tsp. lime zest, 1 tsp. fresh chopped mint, fresh chopped ginger
  2. Cut two 1-inch thick slices from cake
  3. In champagne glass, make first layer of raspberry puree
  4. For 2nd layer add sponge cake with simple syrup
  5. For 3rd layer add whipped topping mix
  6. For 4th layer add blackberry puree
  7. For 5th  layer add sponge cake with simple syrup added 
  8. 6th layer add whipped topping mix
  9. Garnish with halved strawberries, 3 dots of blackberry, 1 sprig of mint.  Refrigerate.
