Salmon Saltado. Recipe by of 26 Sushi & Tapas

INGREDIENTS:
  • 6 ounces salmon (medium dice)
  • 8 ounces fettuccini noodles
  • 60 grams red onion (medium size julianne)
  • 60 grams cherry tomatoes (cut in half)
  • 30 grams snow peas (thinly julianne)
  • 1 teaspoon ginger puree
  • 15 grams yellow bell pepper
  • 2 grams aji amarillo (thinly julianne)
  • 1 tablespoon cilantro
  • 1 tablespoon parsley
  • 1 tablespoon soy sauce
  • ¼ teaspoon garlic puree
  • ¼ teaspoon coriander
  • ¼ teaspoon cumin
  • ¼ teaspoon white wine

 

PREPARATION:

  1. Boil the fettuccini noodles al dente, around 6 minutes.
  2. In a medium size bowl, mix the salmon, cherry tomatoes, snow peas, red onion, yellow bell pepper, aji amarillo, and season it all with the cumin, ginger, garlic, and soy sauce. On a medium heat sauté pan, put all the ingredients in the medium bowl for 5 minutes, and then add the fettuccini noodles.
  3. Let it reduce for 4 minutes. Add cilantro and parsley, toss it one more time and serve.
