Beets Gnocchi

  • 5 pounds of red beets (baked)
  • 1 egg
  • 1 egg yolk
  • Salt and pepper
  • 1 pound of potato flakes (dehydrated)
  • 1 pound of flour (and more as needed)


  1. Put the beets, egg and egg yolk in the food processor for 1 minute. Add salt and pepper to taste. Then place that pure on the table, start to mix with the potato flakes and the flour until you get a thick yet soft dough. Add more flour to roll the dough and cut the gnocchis.

Creamy goat cheese sauce:

  • 8 ounces of heavy cream
  • 4 ounces of goat cheese
  • 2 ounces of parmesan cheese shredded


  1. Cook the gnocchi in boiling water until it floats.
  2. Make the sauce by mixing together all the ingredients in a saucepan.
  3. Stir the gnocchi with the sauce and serve it in a small casserole.
  4. For decoration use a bunch of arugula on top.
