Osso Buco Lamb

  • 4-5 pieces of lamb shank
  • 1 carrot
  • 1 onion
  • 2 stalks of celery
  • 2 bay leaves
  • Salt and pepper

Preparation of Lamb

  • Add all the ingredients to a pot, cook for 2 or 2 1/2 hours on stove until the lamb is soft


  • 1 white onion –chopped
  • 2 sprigs of thyme
  • ½ teaspoon black pepper
  • Pinch of salt
  • 2 cloves
  • ½ stick of cinnamon
  • 1 jar of date syrup
  • 4 cups of red wine
  • 8-10 figs

Preparation of Sauce

  1. Fry the onion until golden.  Add spices, date syrup, and wine.
  2. Cook on low heat for 30-40 minutes.  Add figs.  If needed, thicken with corn starch.


  • Place lamb on tray, pour sauce on top, cover with aluminum foil.  Bake for 30-40 minutes in a 350 degree oven.
