Pumpkin Soup

  • 1 medium onion – chopped
  • ½ medium pumpkin – cubed with skin removed
  • 1 ounce shredded ginger root
  • 2 Peeled and chopped Granny Smith apples
  • 2 tablespoons chicken consommé
  • 1 teaspoon salt
  • Pinch of nutmeg
  • Pinch of white pepper
  • 16 oz coffee rich (non-dairy creamer)


  1. Lightly fry the onion
  2. Gradually add the pumpkin, ginger, apples and spices
  3. 2 cups Water
  4. Cook for 40 minutes on medium heat – until soft
  5. Puree in Blender
