Salmon Dinamita

Ingredients:

  • 8 ounces of Salmon filet
  • 1 tablespoon of minced fresh ginger
  • 1 ounce of soy-sesame oil (2 ounces sesame oil + 4 ounces soy sauce)

Mayo-Dinamita:

  • 10 ounces of mayonnaise
  • 2 ounces of chopped wakame
  • 2 ounces of chopped sushi crab
  • ¼ sliced avocado

Teriyaki sauce:

  • 2/3 cup of mirin (Japanese sweet rice wine)
  • 1 cup of soy sauce
  • 4 ½ teaspoons of rice vinegar
  • 1 teaspoon of sesame oil
  • 1/3 cup of white sugar
  • 1 tablespoon of minced fresh garlic
  • 1 tablespoon of minced fresh ginger
  • Grounded black pepper

 

Preparation:

  1. Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar. Season with garlic, ginger, and black pepper; simmer an additional 5 minutes. Store in a tightly sealed container in the refrigerator.
  2. Marinate the salmon with ginger and the soy-sesame oil.
  3. Put it on a baking sheet tray and bake for 15 minutes on a regular oven.

Serving:

  1. Put the salmon in the middle.
  2. One spoon of dynamite mayo.
  3. Sliced avocado on top of the salmon.
  4. Drizzle with teriyaki sauce.
  5. Add 1 cup of cooked white rice (as garnish).
